It could be profitable to know the satiating potential of your ingredient. You can test this by determining the digestive fate of your ingredient during in vitro stomach digestion. For example, do you know if your protein ingredient behaves as a ‘fast’ or ‘slow’ protein?

In this quick scan you will measure, together with NIZO staff, viscosity, solubility/dispersibility, emulsion stability or force of one of your protein, polysaccharide or fat ingredients during simulated stomach digestion.
