Remove off-flavours
Together with NIZO experts, in a one-day-session, you will measure the flavour composition of two products:
- your target reference product
- your product with the off flavour.
You will also smell the flavour compounds yourself after gas chromatography analysis.
Deliverables:
- You will analyse the differences in flavour composition and smell the different compounds of your products. That will tell you which flavour aspects are responsible for the off flavour.
- Together we will interpret the results and discuss how you can use this information to improve your product.

Analyse the problem and solve it
