Bio-purification of plant proteins: elimination of off flavour, anti-nutritional compounds and phytoestrogens
One of the challenges when replacing animal proteins with plant proteins is the fact that plant proteins can contain undesired compounds that might be perceived as an off-flavor, or have antinutritional effects or interfere with the human endocrine system. This project will be aimed at development of strategies to remove those components by food-grade microbes. This project is accepted and will now be developed towards a full proposal. Next to NIZO, led by Herwig Bachmann, this project will be supported by the WUR and VU and HAS Den Bosch in combination with 2 food companies.
