NIZO cooperated with partners to valorise olive leaf biomass that is rich in bioactive compounds such as polyphenols. To substantiate health benefits, in vitro fecal fermentation in the MicroColon model was combined with a co-culture model comprising intestinal cells and immune cells. Several olive leaf bioproducts were found to have potential health benefits on gut health and beyond.
