Medical oral nutrition supplement (ONS) has been considered as a growing market, due to the surge in population growth of millennial and baby boomers. ONS has shown to have significant benefits both for patients and healthcare systems, as it contributes to the alleviation of malnutrition or disease-specific conditions. Dairy ingredients, especially dairy proteins, are important ingredients for ONS products. Nutritionally, dairy proteins have a good protein digestibility-corrected amino acid score and contain a wide range of minerals. This, in combination with its preferred taste as well as good techno-functionality, makes dairy protein more superior over the other emerging protein sources (e.g. plant proteins) for application in ONS products. Examples will be given on the complexity in formulating ONS with relation to dairy proteins and the regulation of nutrients; as well as some challenges that might be encountered in formulating dairy-based ONS will be elaborated.
